Green Tomato Relish Recipe

As we come to the end of the tomato season, there’s always those few green tomatoes left that just refuse to ripen. We made the most of ours by whipping up some green tomato relish using Stephanie Alexander’s recipe.

Here’s how you can do the same:


  • 1.5kg green tomatoes, thinly sliced
  • 2 onions, thinly sliced
  • 0.5 tsp salt
  • 1 tbsp dijon mustard
  • 1 tbsp garam masala
  • 0.5 tsp cayenne pepper
  • 1 tsp mustard seeds
  • 3 cloves
  • pinch of turmeric
  • 100ml apple cider vinegar
  • 100g sugar
  • 1 tsp cornflour


Place all ingredients except the cornflour into a large pot. Bring to a boil then uncover and cook for 1 hour and 15 minutes. In a separate bowl, mix the cornflour with a little water to form a cream then add a ladle of the hot liquid and mix. Return the mixture to the pot and stir well so it thickens evenly. Cook for another 15 minutes then seal in sterilised jars. All done!
